White tea is made mainly by withering and drying the leaves. The process is simple in outline but takes care and skill: changes continue within the leaves as they wither. Styles range from bud-only Baihao Yinzhen to the leafier Bai Mudan and Shou Mei. Flavours can be floral, herbal or honeyed, with dried-fruit notes developing during storage.
