# How to break up a pu-erh cake

Work along the layers of compressed pu-erh in small sections. Some crumbs are normal and do not, on their own, mean poor tea. Keep the tea stable and your hand out of the tool’s path.

1. **Prepare the surface and tool.** Remove and keep the wrapper. Place the tea on a clean, dry, non-slip surface or tea tray. Use a tea knife or pick with a secure handle for tight compression. A loose edge can be separated gently with clean, dry hands. Kitchen knives, forks and thin household needles can slip or bend.
2. **Find an accessible layer.** Start at a gap in the edge of a cake or brick. Insert the tool between layers, roughly parallel to the tea’s flat surface. Keep your free hand clear of the point’s possible path, including where it could emerge. Never hold the tea in your palm. For a tuocha, look near the edge of its hollow and position it so it cannot rock.
3. **Loosen a little at a time.** Lift the layer gently, withdraw the tool and repeat nearby. Remove a piece once it separates without much force. If it resists, find another gap; do not lean your weight on the tool or heat it. Ask the seller to portion exceptionally hard tea. Avoid wetting the whole cake just to remove one serving.
4. **Weigh the tea and put the rest away.** For short infusions, start with 4–5 g per 100 ml for shu or aged sheng, or 3–4 g for young sheng. Count crumbs in the total weight; brew them in a fine strainer, starting with a shorter time. Rinsing is optional. Store the cake and spare pieces dry, away from strong smells and sunlight. You do not need to brew them the same day.

## Questions and answers

**Should a mini tuo go in whole?**

Only if its weight suits your recipe. If a tightly pressed portion is difficult to divide, use more water and a suitable vessel.

**Can I judge safety by the colour of a coating?**

No. Breaking a cake apart does not tell you what an unfamiliar coating is. Do not assume it is the “golden flowers” found in some other teas. Do not taste suspect tea to check it; ask the seller about its origin and storage.
