Yixing pottery (宜興, yíxīng)

Yixing (宜兴), in Jiangsu, is known for zisha teapots. These are fired ceramic vessels, usually unglazed; zisha includes a range of clays and colours.

Zini, zhuni and duanni are common clay names. The name alone tells you little about porosity or which tea will suit a pot. Clay composition, firing, wall thickness, shape and pouring speed all affect how it brews.

Unglazed clay can retain aromas, so you may prefer to reserve a pot for similar teas, especially if you drink smoked or flavoured varieties. Brew a familiar tea in both clay and porcelain to see which result you prefer.

When buying, check the grip, usable volume, pour and information about the maker and material. Price, stamps, sound and water-drop absorption do not establish authenticity individually. After use, remove the leaves, rinse and dry fully with the lid off. Follow the maker’s care instructions; do not build up dirty deposits for “tea memory.” A porcelain gaiwan remains a useful alternative.
