Yellow tea: processing, flavour and brewing
Yellow tea is distinguished by a processing stage called men huang (闷黄), or yellowing. Controlled warmth and moisture change the leaves’ colour, aroma and taste. A yellow infusion alone does not establish that a tea belongs to this category.

After fixation — heating that reduces the activity of oxidation enzymes — leaves are held under controlled conditions, sometimes wrapped or piled and sometimes alternating with partial drying. The sequence and duration vary by tea. This is a production technique: leaving green tea in a damp bag will not turn it into good yellow tea.
Styles and flavours
Junshan Yinzhen is associated with Hunan, Mengding Huangya with Sichuan and Huoshan Huangya with Anhui. The first two are well-known bud teas. Huang da cha uses more developed leaves; stronger heating can give it pronounced cereal and toasted notes.
Yellow tea need not taste of sweetcorn. Floral, chestnut and fresh notes also occur. A mellow style can still become bitter when brewed too strongly.
Starting recipes
For a bud tea, try 3 g per 150 ml at 80–85 °C. In a gaiwan, allow 15–20 seconds from starting to fill to starting to pour, then drain fully. For a mug with an infuser, use 2 g per 250 ml, taste after 2 minutes and remove the leaves at your preferred strength.
These settings are not universal. For more heavily heated, larger-leaf tea, try 90–95 °C or follow the seller’s recipe. For weak flavour, steep longer; for bitterness, shorten the time or use fewer leaves.
Questions to ask before buying
Ask for the producer, region, harvest year and processing method. “Rare”, “imperial”, a yellow colour or a high price does not verify yellowing. A small sample is more useful than a large purchase based on an appealing description.
Comparing it with green tea can be interesting, but prior experience is unnecessary. Store it tightly closed, away from moisture, heat, light and odours.
Questions and answers
Is yellow tea easier on the stomach?
The category alone cannot promise that. A smoother taste does not establish better tolerance. Yellow tea contains caffeine; do not keep drinking it for supposed benefits if it makes you uncomfortable.
Is Junshan Yinzhen a white tea?
It is yellow tea. Baihao Yinzhen is white tea: their similar “silver needle” names do not imply the same processing.
